We are excited about the starting of this new winter season, or it can be also the moving close of Christmas and of the festivities, but we already have the drool in the mouth, and we want to reveal you some #insider secrets about our kitchen. 

We want to let you enter behind the scenes of the Monroc kitchen, to let you understand the enthusiasm and the fervour with which our staff daily prepare all the dishes,to satisfy all the needs of our clients. 

We reveal to you the secrets of our ravioli, spiced and filled in different ways. Starting from the most traditional until the most refined, such as those filled with pumpkin on Casolet fondue. 

It is not an easy preparation because also the pastry is handmade: care and attention for all the details always bigger, to let you live an unique and unforgettable culinary experience.

Our Chef Mario reveals to you the recipe of the RAVIOLI FILLED WITH PUMPKIN with Casolet fondue, the typical cheese of  Sun Valley. 

INGREDIENTS for 5 people:


200 gr.of flour 

50 gr. semolina wheat flour 

2 eggs 

1 spoon of extra virgin olive oil 

1 spoon of white wine 


400 gr. pumpkin 

150 gr. fresh lucanica (salami)

80 gr. of Trentingrana (cheese)

1 egg and 1 egg yolk

salt, pepper and nutmeg 


150 gr. Casolet (cheese)

1 egg yolk 

extra virgin olive oil 

salt,pepper and rosemary 


Prepare the pastry and let it rest for at least 30 minutes. Cook the pumpkin for 40 minutes. Merge all together with the salsiccia (salami), the eggs and the grated Trentingrana (cheese), salt, pepper and nutmeg. 

Roll out the dough with the machine and distribute the pumpkin in the middle of it, cover with another sheet of it and make the classic ravioli. In the meantime melt the Casolet (cheese) together with the milk and put all together with the egg yolk. 

Cook the ravioli in salty water, pour them slowly and serve it with  the Casolet fondue and with oil seasoned with rosemary.
