  • Drink the tap water. It’s mountain-fresh and tested.
  • Leave towels on the floor if you want them changed, or hang them up to reuse.
  • Sleep better with cooler temps—don’t crank the thermostat.
  • Avoid the lift (come on, your legs will thank you).
  • Use the bike path, the train, the cable car—right outside the door.
  • Ditch single-use plastic. We already did.
  • Respect silence and air. And breathe better—literally.
  • And remember: less charging = less noise = more stars.

MONROC LAB IS HERE. AND IT’S DELICIOUSLY GREEN.

What started as an idea is now a living, breathing space.

MONROC LAB is our in-house taste laboratory: a workshop where Trentino raw ingredients become something extraordinary. Pastries, croissants, fresh pasta, bread, focaccia, jams, preserves, and pickled vegetables—made daily, by hand, with minimal impact and maximal flavour.

Our philosophy? Few ingredients, great origin, no shortcuts.
We work side by side with small local producers and select raw materials that travel little and give a lot. This is how we reduce emissions and support a sustainable supply chain—starting at breakfast.

Since 2020, MONROC proudly holds the Park Quality Environmental Label issued by the Adamello Brenta Natural Park. This recognition is not just a badge—it’s a pact. A pact to promote tourism that respects and protects.

And we’re on our way to achieve the EU ECOLABEL, the environmental excellence certification by the European Union. This means structuring every process to reduce our impact, improve our performance, and increase transparency. For real. For good.
Every green promise we make is reviewed, verified, and updated regularly by external auditors.
