Then there’s the Wine List at MONROC.

Forget endless regional breakdowns and the usual parade of repetitive labels, vintage after vintage. Here, every bottle is a waypoint. An uphill step. A bite of rock. A vision. Our list is a map—for those who love to get lost, and know how to savour every sip along the way.

Nicole, MONROC’s sommelier (and partner-in-exploration), guides you daily through surprising pairings. At MONROC, wine is never poured just to fill the glass. The wine of the day is carefully chosen to pair with the evening’s menu: ready-to-drink glasses, sharp choices, immediate thrills.

INSPIRED BY THE LINES OF THE MOUNTAIN

Here in Val di Sole, all it takes is stepping outside MONROC to understand it: the landscape is not just something you look at—it’s something you move through. Torrents rush under the larches, trails climb through the mountain pines, ridgelines open up through the scree fields. Every element has its own character, its own voice.
The waters of Val Meledrio are wild, sharp, and free. The meadows below the Presanella are soft and patient. The crests leading toward the Cevedale speak of challenge, altitude, and courage.

Our wine list is born from these landscapes.
Don’t expect regions, denominations, or endless rows of the same varietal. But a new way to read the mountain.

THE TORRENT / It comes down the mountain with energy, sparkling and unstoppable. It has the freshness of thin air, the push of a day about to begin. It surprises you, splashes your face, wakes you up. And makes you smile. Effervescent, lively, impulsive. Like the cold water rushing down from the peaks. This is where sparkling wines and bright whites find their place—those that open the path, whet your appetite, and celebrate the moment.

THE TRAIL / From Valpiana to Lago delle Malghette, the trail is always there: it walks with you, lets itself be followed, gives you pauses and vistas. It’s the ally of every explorer, the track you know that always gives you something new. Simple wines, honest, never dull. Easy to drink, but never predictable. The kind you throw in your backpack because you know they’ll never let you down.

THE RIDGE / Above Passo Cercen, the mountain changes voice. The forest gives way to stone, to wind, to unpredictability. The ridge is effort and precision—but also freedom and breath. It’s the realm of those who dare. Heroic wines. Vertical wines, grown with courage. They come from extreme conditions and take you far—beyond the edge of the ordinary. Each sip is a step off the trail.

THE DIHEDRAL / Like a rock face in Val di Rabbi, turning severe after a bend of silence. The dihedral is depth, tension, and story. It demands attention and rewards you with layers that last. Layered, intense, deep. They ask to be listened to—and pay it back. Perfect for those who love long tales, firm tannins, and the seduction of slowness.

THE LINE / Sometimes there’s no track. Sometimes you have to make it. Like the gullies of Val Saent or the exposed rocks of Val Nardis. The line is instinct, boldness, discovery. Innovation, intuition, vision. This is where you’ll find the winemakers tracing new routes. The wines of those who dare, experiment, take risks—and often win.

THE SUMMIT / Reaching the top—maybe Presanella or Corno di Cei—means silence and vastness. Your heart slows, your mind opens. Everything falls into place. The summit is celebration, reverence, truth. Monumental wines. The giants. The ones you open to celebrate—or to acknowledge that yes, you made it to the top. A sip that tastes like a peak.

TRAVEL COMPANIONS

In our world, we give the ratings.
Every wine on the list has been chosen, tasted, loved. Our Explorer Rating isn’t a number from an algorithm—it’s the amount of emotion it stirred in us. The higher the score, the more it made us dream.

Here are a few bottles that, according to Nicole and our wandering palates, deserve a permanent place in an explorer’s pack:

  • “Comtess” Gewürztraminer, St. Michael Eppan
    A white that leaves a mark. Opulent yet direct, it smells like a blooming meadow after rain. Finishes with elegance—like a perfectly placed word.
  • Gran Masetto, Endrizzi
    A bottled monument. Teroldego in its boldest form: intense, deep, vertical. It doesn’t open—it detonates.
  • San Leonardo, Tenuta San Leonardo
    A timeless classic. Aristocratic without arrogance. It’s the Italian Bordeaux, but with its feet in Trentino gravel.

  • Pandataria – The wine of exile, Candidaterra
    A border wine, inside and out. Mediterranean, volcanic, and yet rebellious enough to feel right even at 1,400 meters.
  • Barolo, Diego Conterno
    Authentic Nebbiolo that doesn’t shy away. Tannin that walks softly—but goes far.
  • Amarone Riserva “Cavolo”, Brigaldara
    Decadent, profound, meditative. For when time slows down—and taste stays with you.

Every label on our list has a reason to be there.
Sometimes it’s a story. Sometimes it’s a gesture. Sometimes it’s just a memory—of when we met the winemaker, halfway up a ridge where only the most stubborn grow wine.

That’s how our Signature Wines were born—our house wine: a selection of bottles we’ve chosen, envisioned, and signed together with those who truly make wine.

They are all strictly from Trentino.
They are all relationship wines—born from real friendships.
And above all: they’re the wines we serve when we want you to feel at home.

REDROC / Dorigati
A child of a true Trentino crossing (Merlot × Teroldego), Rebo is a red that doesn’t hold back: dense, spicy, embracing.
REDROC is the wine for long evenings, for stories in the stube, for chats that turn into memories.
It was created in collaboration with the Dorigati family of Mezzocorona—winemakers for five generations.
Between the Dorigati and the Rossi (the MONROC family), it’s not just wine that flows—but an old friendship, one that spans seasons and toasts without ever losing altitude.

WHITEROC / Dorigati
Fresh, crisp, mineral.
This is the white we serve when we want to welcome you with a smile.
A blend that speaks of alpine meadows and valley breezes.
It, too, was born from our connection with the Dorigati family, and carries the luminous soul of the Piana Rotaliana.

TRENTOROC / Pedrotti
Our sparkling signature.
A classic-method TrentoDOC crafted by those who’ve mastered this style from the beginning—the Pedrotti family, in Nomi.
Their historic cellar, carved into the rock, tells the story of the mountain even underground.
TRENTOROC is our way of celebrating. Of starting well. And ending even better.

These three bottles are not available anywhere else.
They’re part of our story.
And when we pour them, we’re not just serving wine—we’re sharing something more.
